The Old Cake from Palembang


“ENGKAK KETAN”, THE OLD CAKE FROM PALEMBANG

 
This cake is similar to layer cake but who knows?, if Engkak Ketan is very different from other layer cakes. Distinctive layer cake from Palembang, South Sumatra is fairly unique because it is made of glutinous rice. It is chewy with a sweet taste. No wonder because it uses glutinous rice so that the texture is slightly chewy soft.







You do not need to worry about the sticky cake when eating it, because the ingredients use coconut milk makes this cake not sticky.  Engkak Ketan or glutinous  layer cake is usually served when there is a big event especially  Idul Fitri and Idul Adha. This cake is different due to a long process and baking in the oven which made from clay. Local people called this Oven “Gendok”. In addition, to make this cake,  you need patience because the baking process is done by creating a layer  using ladle. To make this cake you need to prepare the ingredients first.



This is the receipe Engkak Ketan from Palembang

Ingredients :
·         1 kg of sugar
·         1 kg of glutinous rice flour
·         1500cc cooked coconut milk
·         1 can sweetened condensed milk
·         250 grams of butter (melted)
·         10 pcs eggs
·         vanilla in sufficient
Direction :
·         First,  Glutinous rice flour and coconut milk mixed first, separate
·         Second, Whisk sugar and eggs until white use hand mixer about 3-5 minutes
·         Then,  put all the other ingredients, mixed
·         After that  Filter it.
·         And prepare a baking pan size 22 × 22. Rub the butter, put baking paper.
Last, Bake like baking a layer of layers. The first layer, baked in the fire was almost cooked move to fire up, then the second layer, and so on in the fire up.
Sometimes, this cake can mix with durians to  enhance taste of the cake.
